I have been baking these muffins regularly for my fussy boy. They’re super easy to make, full of protein and the best bit…they contain a cup full of vegies.
Here’s the recipe:
Savoury Muffins for Toddlers
Ingredients
1 1/2 cups self-raising flour
2 cups grated cheese
1 cup of diced cooked bacon
1 cup of your chosen vegies either blitzed in the food processor or grated/finely diced (peeled zucchini is the safest option for super fussy tastebuds…here I used zucchini & carrot)
1/4 cup of finely chopped chives (leave out if your toddler has an aversion to green)
3/4 cup of milk
1 egg
Instructions
- Pre-heat oven to 200°C (400°F).
- In a large bowl stir together flour, cheese, bacon, vegies and chives.
- Mix the milk and egg together.
- Pour milk mixture into the flour mixture.
- Stir until just mixed (it should have a thick, lumpy consistency).
- Grease a 12-cup muffin tray and scoop batter in evenly.
- Bake in oven for approximately 20 minutes or until golden brown.

Great! Im going to try your recipe. Ive made bacon cheese or ham or chicken and cheese muffins for the girls’ lunches in the past – but they turned out a little dry. Yours looks better than mine, so I’ll give it a whirl.

These look awesome. Our play school / play group just went totally completely nut free – not even “may contain traces of nuts” allowed – so I’m going to have to start baking far more often. These look yummy, I’ll give them a try!

My husband and preschooler made these this morning, upon my request (I don’t bake) but in the absence of bacon, cheddar and zuch, they used cocoa, pumpkin, and sauerkraut. Amazingly, they were delicious.

can you freeze them?
I’ve frozen them many times, wrapped individually in glad wrap. Of course they’re never quite as nice as when they’re fresh out of the oven!

Absolutely! I’ve made them countless times and I think it’s the grated cheese that does the trick.

Good to hear! Yes, they’re great for freezing. I wrap them individually in glad wrap and then leave them on the bench to defrost. They’re usually fine by morning tea time.

Yes they do, I often reheat them when I’ve made a big batch. Of course they never taste as good as when they’re fresh from the oven!
I’d love to make something like these muffins for my toddler, but he’s allergic to dairy and eggs. Do you have any idea whether using a replacement milk (like soy) and an egg replacement (I usually use applesauce and baking powder) will work out all right with this recipe? I would also just skip the cheese.
Oh that must make it challenging for you to come up with snack options for your little one! Well done to you for approaching recipes so creatively. I’ve never tried making these muffins without egg or cheese. If you do experiment, I’d love to know how you go.

FYI, if anyone ever comes around asking a similar question, I tried the recipe out today using soy milk, 1/4 cup applesauce + 1/4 tsp baking powder (egg replacement), and Daiya brand cheddar cheese (it’s dairy free), and it worked out pretty well! The muffins are a bit dense, but I think I may have over-stirred the batter. They taste pretty great though!

For a quicker fix, could we just use Bisquick? I’ve made the Red Lobster garlic cheddar biscuits from Bisquick, and I think you can adjust the consistency of the batter to match that of a muffin. Anyone tried that?
Thanks for your comment Krystle. I don’t think we have Bisquick here in Australia. The great thing about these muffins is that you can make many variations to suit your taste and time. On a side note, garlic cheddar biscuits sound incredibly tasty!
Just wondering how to adjust these when using whole wheat flour? Should I alter the milk, egg, and/or time needed? Thanks in advance!
Sorry for the late reply Lauren, I have never tried this recipe with whole wheat flour. I have had this on my to-do list for a while, but find that I am making the muffins so much less now that my children are older and eat a wider variety of foods. Please let me know if you tried it and how it went.

Any salt or pepper?
I’m all for seasoning in kids’ dishes, though the cheese is quite salty on it’s own. A pinch of pepper would be fab.

I don’t know if I’ve gone wrong as the middle of mine seem quite Stodgey and slightly wet (but dry when cooled) is that normal? My daughter is still eating them though haha
Hi Michelle, It sounds like you might need to cook the muffins a little longer. The cheese is gooey, but once the muffins are cooled the gooiness should be gone. Love that your daughter still eats them!

Do the veggies have to be cooked first?
No you don’t need to cook the vegies. As they are processed so small, they will soften quickly inside the muffins.
They have come out very very yummy! Thanks a ton for the wonderful recipe. Btw I used cottage cheese instead of bacon and onion, green pepper instead of chives.
Need some advice though- are they good to be kept at room temperature or should they be put in the refrigerator if I wish to use them over 2-3 days?
@momsdilemma, i would keep them in the fridge as they have cheese in them. Just like you would for your tub of cottage cheese or cheddar.

Question! My kids absolutely love these muffins but they struggle with the regular size muffins, do you have any suggestions for turning them into mini muffins? Would there be a difference in cooking time or ingredients? I just don’t want to mess it up. These are seriously the best muffins ever!
